I often joke that I run so I can eat, but I’m serious. Food is delicious, and I love burning calories so I can enjoy my favorites guilt free. To be fair, food is also fuel, so it can be important to eat things that provide the proper nutrition to help get you through your workouts. Let’s talk about five of my favorite fitness-friendly meals!
Big Salads
I love a big salad. Raw veggies are more delicious to me than cooked, so salads are a great way for me to get those in. But I want a salad loaded with chopped “stuff.” Greens are great, but give me cucumbers, olives, carrots, nuts, cheese, chickpeas, and all the things. Toss in some protein, and add a little dressing on the side, and you’ve got a delicious, fitness-friendly meal.
Salmon Dinners
I will eat salmon all day every day. It’s one of my favorite proteins and it goes with just about everything. Blackened salmon with roasted veggies is a great meal, but lately, we’ve been eating salmon bowls, with seasoned, air-fried salmon, sushi rice, avocado, and pickled cucumbers. So good, and so good for you.
Acai Bowls
Apparently, I like bowls full of all different things. Acai bowls are another great way to get in lots of variety, as well as fruits and protein via nut butters. I like that they are light and a little more sweet, and are a great breakfast, snack, or dessert.
Stuffed Baked Potatoes
Baked potatoes are one of my favorite foods, and they are great for stuffing. I love combining the carb base with all kinds of delicious things. Split your potato to add taco fillings, or diced chicken. Roasted broccoli and cheese is another great filling. Or use baked sweet potatoes and filled them with turkey and black beans. Filling and yummy!
Oatmeal
Although potatoes are my favorite, oatmeal really is a perfect food. And it’s not just for breakfast! You can have oatmeal any time of day and load it up with lots of fruit, nut butters, and other toppings that will give you a nutritional bang for your buck! I love mine with berries, slivered almonds, a touch of brown sugar and a little splash of cream or milk. Yum.

I am on a cream of wheat kick. It’s so good with honey.
I can eat salads all the time, as long as they have a lot of stuff in them.

you pretty much nailed all my favorites. if we had to be stuck with each other for a week for sure we’d not have to worry about what we were going to eat!
