winter comfort food: a publix gift card giveaway

This onslaught of colder weather changes the game in our kitchen a little bit. My winter tastes tend to run towards stews, soups, casseroles and one-pot crockpot type dishes: hearty, comforting meals that stick to the ribs and keep the chill away. I love to make loaded baked potato soups, chicken and dumplings, and pretty much anything that involves mashed potatoes, but those can be heavy and not necessarily full of veggies or other nutritious ingredients.

There are a few recipes in my wheelhouse that are lighter, healthier and perfect for the cold winter’s nights. I always try to stock the base ingredients for those meals when I do my weekly shopping at Publix, and that way, everything is in the pantry, ready to go.

But our favorite easy winter meal is a Crockpot Santa Fe Chicken from SkinnyTaste.com. It’s simple to make, full of flavor and heats up great as leftovers.

I can toss the ingredients in the crockpot in the morning (We cut down on the diced tomatoes and add in about 1/2 – 3/4 cup of tomato sauce to thicken the consistency. We also swap in some minced garlic for cilantro, but that’s the beauty of this recipe – it’s so easy to mix it up!)

and by dinnertime, we have a delicious and healthy meal ready to go.

This is an incredibly versatile dish, which can be served alone as a soup or stew, over rice, as a filling for tacos or a topping for nachos or even salad.

    Oh my gosh! So I grew up in Florida with a Publix a mile and a half from my house. I kid you not one of the things I missed the most and North Carolina is Publix!

    Luckily for me, Publix recently opened their first store and the area!

    I just might have a new favorite – I recently tried Taco Chili (it’s one of the Publix Apron recipes!) and fell in love with it. Made it for the first time last week!

    My favorite winter comfort food is chicken pot pie. I love making it all from scratch – crust too! I also make filling and then making homemade biscuits to put on top.

    I really need to use my crockpot more. I actually just used it today to make beef stew. I had NO idea you could buy liners for it so you don’t have to be scrubbing for hours lol This recipe looks delicious!

    That looks amazing! My personal favorite winter recipe is my husband’s “beefaroni,” made with ground turkey, a bunch of different spices and seasonings, a dash of hot sauce, and the surprise hint of sweet from a tablespoon of grape jelly.
