oven-baked meatballs Recipe

Delicious Italian meatballs, just like Nonna used to make. This is not an exact recipe - practice makes perfect on this one, and you'll find the proportions that work best for you.

Ingredients

  • 1 pound ground beef or turkey
  • 4-6 cups red sauce homemade or jarred
  • 1 eggs lightly scrambled
  • 1/2 onion chopped
  • 1-2 cloves garlic minced
  • basil, oregano, parsley to taste
  • salt & pepper to taste
  • italian breadcrumbs
  • grated parmesan cheese

Instructions

  1. Preheat oven to 375. Lightly coat bottom of casserole dish or foil pan with some sauce.
  2. Saute the onions and garlic in some olive oil until nice and glassy. Season with some salt and pepper to taste.
  3. If you are using fresh herbs, finely chop them while the onions and garlic are cooking.
  4. Combine meat, egg, herbs, and onions and garlic in a large bowl. You're going to want to use your hands.
  5. Start adding equal parts of breadcrumbs and parmesan cheese. Keep mixing and adding until the meat mixture is able to form a ball that is slightly sticky to the touch.
  6. Roll the meatballs, about 1.5" in diameter, and place them in your sauce-lined baking dish. Drizzle with remaining sauce (or however much you like) and a sprinkle of parmesan cheese.
  7. Cover the pan with foil and bake for 45-60 minutes. Serve with pasta, on Italian rolls or alone. Mangia!

Feeling 100 times better today (i had some nasty sinus/ear issues since this weekend), and I as so happy to feel great on this run.

We have meet the teacher today and then we close out the summer.

While it’s been nice, I am looking forward to being back on some kind of schedule and routine.

Had to switch things up this week, but that wasn’t an excuse to skip the beach! Hot and beautiful morning for sure. It was a little more crowded than on Mondays, but that’s ok. 

Some miles on the sand and then some on the bridge. Time to get some elevation back in my life.

Switched things up and met a dear friend for some Switched things up and met a dear friend for some miles and chit chat this morning. It was great to reconnect and spend some time, especially before the school year gets going.

Trying to keep a positive running mindset but yuck! We adjusted by slowing down, taking breaks as needed and being as dramatic as possible.
