Though I do enjoy cooking, when I can get away with a 5 ingredient meal, I am really in my happy place. Things are complicated in our kitchen with a lot of dietary restrictions, so it’s nice to be able to drop back and
The meal in question? Burrata With Stone Fruit and Tomatoes. Technically, it’s supposed to be peaches, but I couldn’t find a single peach, so plums it is. This is easy, light, and requires exactly zero cooking.
Burrata
Get yourself your favorite burrata. Burrata is an Italian cheese made from mozzarella and cream. The outside is more solid, while the inside is comprised of stracciatella and cream, which makes it a little soft and absolutely divine.
Stone Fruit
Slice up your favorite fruit: peaches or plums. Peaches are better, but we do what we can do.
Tomatoes
I used a red beefsteak and an ugly yellow Santa Sweet. Slice them into thick pieces and sprinkle with salt and pepper (Herbs and spices don’t count. Chop up some basil and toss that on top, while you’re at it!)
Olive Oil + Balsamic
These go to together like PB+J, so I’m counting them as one. Arrange your cheese and fruit on a plate and drizzle everything with a good extra virgin olive oil and a balsamic reduction or glaze.
Crusty Bread
Spread some crusty bread with olive oil and toast or grill. This brings some texture to the meal

This looks really nice. Gotta have the crusty bread 😉 Tomatoes and peaches make fro a great flavor combo (but I’m sure the plums were great fill-ins).
